Hi Jackie,

When adding text you can use the button in the editor to center it.

If you mean you don't want the two column layout you can change that under page actions > page settings and pick a one column layout. Not all templates have this option, but lots do. Once you have the one column layout your text will fill the entire screen and you can center it if you like.
