I have found a baptism record for a Mathew Henry Hirtsle which gives his birth date as 1 JULY 1833 and Baptism date 29 - May - 1933 parent named as George Hirstle & Mary Saxton FHL Film Number 558344 - 558345. should the date bee the other way round or are one of the wrong date?.

Mathew Henry was Baptized the 27 - 04 - 1833 at St John The Baptist in Penistone Yorkshire
date of birth is given as 1 - Jul- 1833 FHL Film Number 558344 - 558345.
Both these dates are given on the same document.

Its probable an error but as I can only find transcription on FMP & Family Search I would suspect that there is a transcription error in the register.
BUT having said that I believe FMP has bought the material from Family Search so the same mistake could have been duplicated as it would have been from the same source.
I would suggest you write to the Church in question and see if they can help.
Their registers should have been deposted but where I have no idea.
The GRO death registration for a MATTHEW HIRSTLE (no middle name of Henry recorded) records his death as:
Death: 1889 December qtr. at Wortley. aged 57 (so possible birth in 1832)
This also supports a birth year of 1832 which is recorded in the probate records on Family Search.
JUST A SUGGESTION:
Birth July 1st 1832
Baptism: 27th April 1833
